Protects against Salmonella Bacteria
Coriander seeds and cilantro leaves contain an antibacterial
chemical called dodecenal. Researchers at the University of
California, Berkeley found that dodecanal was more potent
against Salmonella than gentamicin, a drug used to treat
salmonella poisoning. “We were surprised that dodecenal was such a potent antibiotic," says study leader Isao Kubo, Ph.D., a chemist with the University of California, Berkeley.
Works as a Natural Chelation Treatment
According to Dr. Yoshiaki Omura, Director of Medical Research of the Heart Disease Research Foundation cilantro was found to chelate (remove) heavy metals like mercury, aluminum, and lead from the body. In fact, it is believed to cross the blood-brain barrier and actually remove said metals from the brain.
In 1995, Omura observed that subjects had higher than normal levels of mercury in their urine after consuming Vietnamese soup, which has large amounts of cilantro/Chinese parsley. He followed up on this finding and discovered that giving cilantro to patients with mercury poisoning for several weeks successfully eliminated the toxin from the body.
